Since we are already experiencing beautiful summer weather here in the South, I've been trying out some warm weather recipes. Funnel cakes always remind me of a summertime fair and are a great treat on hot summer nights.
Here's the recipe...

Ingredients:
1 egg
¾ cup milk
1 cup flour
1 teaspoon baking powder
¼ teaspoon salt
¼ teaspoon cinnamon
Oil for frying
Powdered Sugar
Directions:
Heat oil in fryer to 350 degrees. Combine egg and milk in a mixing bowl. In a small bowl mix together flour, baking powder, salt and cinnamon. Add dry ingredients to egg mixture. Pour ¼ cup batter into a funnel and swirl in a circular motion into the hot oil. Fry for 1 minute and flip. Continue to fry until golden brown. Sprinkle with powdered sugar while hot.

I had my first funnel cake at an auction yesterday! Oh Yes! Very yummy!
