Mexican Rice

Mexican rice is a great side dish for tacos, fajitas or enchiladas.  

It's super easy to whip together and uses very basic ingredients. 

Try this recipe as an alternative to an overpriced box mix!

Mexican Rice

Ingredients:
1 cup uncooked rice
2 cups chicken broth
1 tablespoon butter
½ cup salsa
1 teaspoon garlic salt
1 teaspoon taco seasoning

Directions:
Bring all ingredients to a boil.  Reduce heat to low and cover.  Simmer for 20-25 minutes.

  4. Hi Alisa! I don't cook much so I have to ask the most basic of questions. Would short grain rice be ok for this recipe? And can this be done in a rice cooker/steamer instead of on the stove? Thanks!

  10. The 1st two are right. But you don't need salsa or the others mentioned in the pinned recipe. The proper way is to first saute a 1/2 cup chopped onion for about 5 min in a tbsp oil (evoo is ol), followed by 1 tsp freshly minced garlic for 30 sec. You then add 1 cup rice, 2 cups chicken broth, one 8oz tomato sauce and throw in a few sprigs of fresh cilantro for more flavoring. No additional salt is needed as it's already in the broth. Being Mexican the way I have been making it is the way I was taught as a child by my family in mexico. Also you can add pea's to your rice at the end if you want.

  16. I adapted this to my microwave recipe because I absolutely can't make rice on the stove. Mix all the ingredients in a covered dish, microwave on high for 5 minutes, stir, and microwave on 1/2 power for 20 minutes. Watch for boil over. Perfect every time!
