Morning Glory Muffins


Morning glory muffins are one of our favorite breakfast foods!  I tweaked a few different recipes from Allrecipes.com to come up with these yummy muffin.


They are filled with healthy goodness!


Here's the recipe...

Morning Glory Muffins

Ingredients:

1 cup all-purpose flour
1 cup whole wheat flour
3/4 cup brown sugar
1 tablespoon cinnamon
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups grated carrots
1 apple chopped
1 cup raisins or dried cranberries
1/2 cup chopped pecans
1/2 cup ground flaxseed
2 eggs
2 tablespoons honey
1/2 cup unsweetened applesauce
1/4 cup vegetable oil
1 tablespoon vanilla extract

Directions:

Preheat oven to 375 degrees.  Lightly coat 18 muffin cups with nonstick cooking spray.  Whisk together eggs, 
honey, applesauce, oil and vanilla.  In a large bowl, stir together flour, brown sugar, cinnamon, baking powder,baking soda and salt.  Stir in carrots, apples, raisins, pecans and flaxseed.  Stir in applesauce mixture just until moistened.  Pour batter into prepared muffin tins and bake for 15-20 minutes.

Progress

So our bathroom makeover has taken a little longer than expected.  We've been trying to work on it when we have a little free time on the weekends and on weeknights.  

{That's probably why it has taken so long!}

Well it's almost finished!



The tile is laid...
{goodbye linoleum!}

The trim and walls are painted...


The cabinets are refinished...



and there are just a few finishing touches left to complete!


I will post more pictures  when it is completely finished!

SS Promotion

My husband and I teach the 1st-3rd grade Sunday School class at our church.  In order to encourage the kids to memorize the Bible, listen and answer questions we put together a special incentive contest.  
For this contest, each child has a wallet with their name on it and in class they have an opportunity to earn "Bible Bucks" (dollar store play money) to put in their wallet.  

They are many different ways to earn bucks and if they are diligent each child should have a full wallet by the end of the contest.  At the end of the promotion we will have a special store for them to spend their hard earned Bible Bucks. 

To make the wallets I used an envelope template and cut it on my Cricut.   The SVG template is found here.  I adjusted the dimensions in Make the Cut so the "dollars" would fit in the wallets.  They are cut out of heavy card stock, so hopefully they will hold up throughout the promotion.





To put each envelope together, I used double-stick tape on the seams and attached a piece of velcro for a closure.




Our Sunday School kids are super excited about this new contest and have been on their best behavior!  ;)

Yard Sale Finds

A couple of weekends ago I find these vintage books for a $.25 at a yard sale.

The lady mentioned that they used to be her husband"s books when he was a child.  They were in mint condition and so cute!


I am just amazed by how long the paragraphs are on each page.

The books are about the size of a Golden book, but they seem to have quite a few more words.



Children obviously had a much longer attention span back in those days!

Healthier Cookies


I can't exactly say these are diet food. 
 
{They still have butter and oil and a lot of sugar.}

But they are at least a little bit healthier than the average chocolate chip cookie.


The secret healthy ingredient is whole wheat flour.


The whole wheat flour replaces the usual refined white flour for an extra healthy boost.


Don't let the whole wheat flour scare you away.  They really are very good!  The lemon juice in this recipe activates the baking soda, making these cookies soft in the center and chewy on the outside. 

Your kids will never know the difference!


Here's the recipes...


Healthier Chocolate Chip Cookies
 
Ingredients:

3/4 cups sugar
3/4 cup packed brown sugar
1/2 cup butter, softened
1/2 cup canola oil
1 teaspoon vanilla
1 egg
2 cups whole wheat flour
1/4 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon lemon juice
1 cup miniature semisweet chocolate chips

Directions:

Preheat oven to 375 degrees.  Combine sugars, butter, oil, vanilla and egg until blended.  Add in flour, salt, baking soda and lemon juice and stir until well blended.  Stir in chocolate chips.  Drop by rounded tablespoon onto an ungreased cookie sheet.  Bake 7-9 minutes until set.  (Cookies will still be soft in the center.)  Cool 1 minute; then remove to a cooling rack.

Burlap Placemats


I found the inspiration for these burlap place mats from Linda at Craftaholics Anonymous.  Linda has so many cute burlap ideas and also some great tips for working with burlap.  Check out her helpful hints here.



These were super easy to make and don't require any sewing!  I simply measured and cut using Linda's tip for pulling a thread to make them even.  Then I frayed the edges and trimmed them all the way around. 



I printed the numbers on cardstock and cut them out to make a stencil.  Using fabric paint, I stenciled on the numbers.  
You can spray the place mats with starch to make them a little stiffer too.
