This yummy recipe tastes just like a warm oatmeal cookie. It is put together the night before, making busy mornings a little less hectic.
There are many variations of this recipe on the internet, but this is my personal favorite...
1/3 cup butter (melted)
3/4 cup brown sugar
1 1/2 teaspoons baking powder
1 1/2 teaspoons vanilla extract
1 teaspoon cinnamon
1/4 teaspoon salt
1 cup milk
2 tablespoons milk
3 cups oatmeal (regular or quick oats)
1/2 cup raisins (optional)
Grease a 1 1/2 quart baking dish. Crack eggs into dish and beat well. Add brown sugar, baking powder, vanilla, cinnamon and salt. Mix well until there are no lumps. Whisk in melted butter and both measures of milk, then add the oats. Stir well and refrigerate overnight. Stir in raisins and bake in a preheated 350 degree oven for 35-40 minutes.
