Harvest Treats

Pumpkin bars are the ultimate fall dessert.  

They have lots of cinnamony pumpkin flavor with the sweetness of cream cheese frosting.

My mom has been making this recipe for as long as I can remember.  

Fall just wouldn't taste the same without pumpkin bars!

Here's the Recipe...
Pumpkin Bars

4 eggs
1 2/3 cups white sugar
1 cup vegetable oil
1 (15 ounce) can pumpkin puree
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
1 teaspoon salt

3 oz. package cream cheese (softened)
1/2 cup butter (softened)
1 teaspoon vanilla extract
2 cups powdered sugar


Preheat oven to 350 degrees.  In a large bowl mix eggs, sugar, oil and pumpkin until fluffy and smooth.  Combine flour, baking powder, baking soda, cinnamon and salt.  Gradually add flour mixture to pumpkin mixture until thoroughly combined.   Spread the batter into a 10x15 jellyroll pan.  Bake 25 -30 minutes.  
To make frosting, combine cream cheese, butter and vanilla.  Gradually add in powdered sugar and beat until smooth.  Spread onto cooled bars.
