Comfort Food


 Potato soup is one of my favorite comfort foods.  It is perfect for cool, fall evenings.
 
This is one of my mom's tried and true recipes that we enjoyed growing up.  

This basic recipe is perfect just the way it is, but when I'm feeling creative sometimes I spice it up a bit.  I have added 1-2 cloves of fresh minced garlic, 1/2 teaspoon of thyme or 1/4 - 1/2 teaspoon cajun seasoning in place of some of the salt.  I have also added crisped bacon.  

Serve with fresh garlic bread for a yummy meal.

Slow Cooker Potato Soup

Ingredients:

6 cups cubed, peeled potatoes
3 cans chicken broth
2 cups onion, chopped
1 cup celery, chopped
1 cup carrots, thinly sliced
1/4 cup butter
2 t. salt
1/4 t. pepper
1 (12 oz.) can evaporated milk
3 t. dried parsley

Directions:

In a large slow cooker, combine the first 8 ingredients.  Cover and cook on high for 7 hours or until the vegetables are tender.  Add milk and parsley and cook an additional 30 minutes until heated through.  (This can also be made on the stove, by simmering the first 8 ingredients until tender and then adding the milk and parsley.)

  2. This sounds delicious, I make potato and leek soup with crispy bacon bits sprinkled on top...this recipe sounds like it would warm the soul perfect for the Autumn weather we're having!Yvette

  4. Thank you so much for sharing this recipe... I made it in my crockpot today for dinner and it was so delicious. My DH had 3 big bowlfuls, so you know it was good! I added minced garlic, thyme and cajun seasoning, and when I served it I topped it with some crisped bacon that I chopped up... yummy. Thanks again for this great recipe.

  6. So I never comment on random recipes that I find via the internet...but I just HAD to with this one. I found you on Pinterest and seriously - this soup was SO GOOD. My husband doesn't even like soup, but he devoured a couple bowls of this. I put in 2 cloves of garlic and the Thyme as you suggested and then just made it on the stove in my dutch oven. It was ready FAST too. Thank you SO much! Kudos! :)
