Corn Dog Muffins


Corn dog muffins have the taste of a corn dog without deep frying!  

They make a fun snack or an easy lunch.



Here's the recipe...

Ingredients:

1 cup all-purpose flour
1 cup yellow cornmeal
2/3 cup white sugar
1 teaspoon salt
3 1/2 teaspoons baking powder
1 egg
1 cup milk
1/3 cup vegetable oil
4 hot dogs (chopped)
1/2 cheddar cheese

Directions:

Preheat oven to 400 degrees.  Grease muffin tins.  Combine first five ingredients in a large bowl.  Stir in egg, milk and oil.  Add hot dogs and cheese.  Bake for 15 - 20 minutes.  Allow to cool for 5 minutes before removing from pan.  Makes 18 muffins.

  6. Oooh, I bet my daughter (almost 3) will love these! We just shared a corn dog at the state fair over the weekend, and she would have eaten the whole thing if I'd let her!
