I found this great recipe on Allrecipes.com for a peanut butter banana smoothie. I was really impressed with the great flavor even though it only uses a few basic ingredients.
My one year old just loved it and that's saying a lot considering he is not a fan of cold beverages.
I did adjust the recipe slightly...
I used almond milk instead of soy, because that's what my son drinks. I also reduced the honey to 1/2 - 1 teaspoon as it was already pretty sweet without the honey.
The key to making this smoothie ice cold and frothy, is to use frozen bananas.
I chop and freeze overly ripe bananas to keep a supply of frozen bananas on hand for smoothies, milkshakes and baking.
Here's my version of this recipe with the serving size doubled to serve two.
PB Banana Smoothie
(printable version)
2 bananas - chopped and frozen
1/4 cup peanut butter
1 cup milk
1 teaspoon honey
Combine all ingredients in blender. Blend until smooth.
(Garnish with chocolate syrup for an extra yummy treat!)
