Vintage Macaroni Salad Recipe


Here's a yummy recipe for macaroni salad taken from a 1940's recipe book.  
This recipe is the perfect combination of sweet and tangy!  I love macaroni salad from the deli, but this is by far the BEST I have ever tasted!

Here's the recipe...

16 oz.
elbow macaroni
1 C.
Miracle Whip
1/2 C.
mayonnaise
1 Tbs.
cider vinegar
1/2 tsp.
lemon juice
1 Tbs.
sugar
1 tsp.
salt
1/2 tsp.
pepper
1 cup
green & red peppers (combined), - seeded and chopped
1 C.
chopped celery, minced fine
1 med.
onion, chopped
1/3 C.
sweet baby gerkins, chopped

Directions:

Cook macaroni acccording to pkg. directions; do not add salt. Drain macaroni in colander and run cold water over it to cool it. Drain throughly.
For the dressing: in a large bowl, mix mayonnaise, vinegar, lemon juice, sugar, salt and pepper until well blended. Add cooked macaroni, chopped celery, onions, peppers and pickles. Toss to coat evenly. Refrigerate several hours before serving.
